If you are scrambling for a last-minute Valentine’s Day treat, or honestly just want something delicious to celebrate life, Cheesecake Lab on Jefferson Highway in Baton Rouge is your new happy place. I got the chance to chat with owner and pastry chef Mitchell Moore, and wow… this place is a playground for cheesecake lovers.

The shop literally looks like a lab, and that is exactly what it is. Mitchell experiments with flavors constantly, and he invites people to come in and create their own cheesecakes. He gave me a little sneak peek at what’s coming up, and this month there are five rotating flavors, with March already teasing Crème Brûlée. Of course, their core flavors like Original Southern Style, Caramel Apple Crumble, and Banana Pudding are always around, but the rotating ones are where the fun begins.

I tried a couple myself, and I have to brag about them. The Dubai Chocolate was rich but not too sweet, and the Chantilly was just perfect with a cake base instead of the usual graham cracker crust. Honestly, it was like a little bite of heaven in every forkful.

And if you think this is just about eating cheesecake, think again. They have chocolate-covered strawberries for their Valentine's day cheesecake special, individual cheesecakes topped while you wait, and even King Cake cheesecakes where you might get lucky and find the baby. Everything feels interactive, playful, and just plain fun.

Mitchell’s shop has blown up on TikTok for good reason, and I totally get it. It’s a place to experiment, celebrate, and support local all at the same time. Whether you are grabbing a Valentine’s Day treat, treating yourself, or surprising a friend, Cheesecake Lab is a spot that makes you smile before you even take your first bite.
